Let’s Talk Beef with Canada Beef President Michael Young

Hey Canada, here is another thing we can be proud of….our beef. Did you know that Canada produces some of the best beef in the world? 

In 2020, Canada Beef found Canadians consume 18.1 kilograms of Canadian beef per person annually. While being big beef consumers, not many Canadians are actually overly familiar with what makes our beef so tasty. In order to help Canadians feel more connected with the beef they are eating, Steven Hellmann, Founder of The Foodies Group, had the rare opportunity to talk about all things beef with the President of Canada Beef, Michael Young. 

A topic of focus for the conversation centred around the idea that Canadians are still very unfamiliar with how the grading system for beef works and what exactly each grade means when it comes to meat quality. Michael broke down the intricacies of the system and explained that beef grading allows processors to assess the meat quality of the carcass and the grades A, AA, AAA and Prime determine the quality/value level of the meat itself. Michael notes that one of the most important factors that go into grading beef is marbling.

When looking to buy beef, in order to get the highest quality, Micheal says beef that is graded AAA is the best choice because it packs just about the same beefy punch as a prime grade, but won’t be a financial set-back.
